Vegan Blueberry Nice-Cream

Serves 6

This raw-food recipe is an antioxidant-rich dessert with only three ingredients. It's super healthy, super easy and delicious. See notes.

Ingredients
2 cups frozen blueberries (or 500g packet)
2 frozen bananas, peeled and sliced
2 Tablespoons rice malt syrup (optional)
Toppings (optional)
Rice malt syrup
Chia seeds

 

Method

Place the frozen blueberries, frozen banana and rice malt syrup into a food processor and blend on medium to low speed until pureed. Scrape down the sides when needed. Serve immediately or place in a freezer-proof container and freeze for 2-4 hours. You can freeze the leftovers overnight.

 

Eczema note

If you have eczema or salicylate sensitivity, use frozen peeled pear instead of blueberries and avoid coconut.

Note

We used organic desiccated coconut in the photo, above. Note that regular desiccated coconut contains preservatives so chia seeds was used as a healthier alternative, as they rich in omega-3 for healthy skin.
